This could be a datastore level configuration I guess, but we could also make it a per feature type one using a design such as the one described here:

As to how to treat the columns in WFS-T, that is a bit hairy. We could treat the columns as read only, or try to use them as the pk values if the strategy for PK treatment is "user assigned".
